French Onion Soup

Ingredients

  • 5 large onions
  • 20g President Salted Butter
  • 20g Flour
  • 1 1/2 cup white wine
  • 3 Beef stock pots (substitute for veg stock pots if required)
  • 10 cups of water
  • 5 sprigs of Thyme
  • 2 tbsp Worcester Sauce
  • French Baguette
  • President Emmental
  • Salt/Pepper

Preparation

Step 1

Prepare onions in a large pot as per our Caramelised Onions video, found here How to Caramelise Onions

Step 2

Add white wine and salt, cook until syrupy

Step 3

In a separate bowl, mix the butter and flour until it forms a thick paste

Step 4

Add to the pot and dissolve into the onions.

Step 5

Add Thyme, stock pots, 10 cups of water and Worcester sauce.

Step 6

Bring to a low simmer for 5-10 mins to cook out the flour. The flour is cooked when the soup becomes glossy.

Step 7

Ladle into oven/microwave proof serving bowls

Step 8

Add a couple of baguette slices on top of the soup

Step 9

Sprinkle grated President Emmental generously over the soup

Step 10

Grill in the oven until the cheese is nice and melted, then enjoy!
