Apple pie like you’ve never seen it before

Ingredients

  • 1 sheet puff pastry
  • 4 apples
  • 4 small cinnamon sticks
  • 40g Président unsalted butter
  • 40g brown sugar
  • For the cream:
  • 25cl milk
  • 25g flour
  • 50g sugar
  • 1 egg yolk
  • 1/2 vanilla pod

Preparation

Step 1

Prepare the crème pâtissière: to do this, combine the egg yolk and the sugar and whisk until the mixture turns white.

Step 2

Add the flour and stir well, then pour into a pan. Set aside.

Step 3

In the meantime, in another pan, heat up the milk.

Step 4

When it starts to bubble, pour into the egg mixture, then add the vanilla pod.

Step 5

Put the pan on a low heat and whisk until it comes to the boil.

Step 6

When the cream has thickened, remove from the heat and leave to cool.

Step 7

In the meantime, cut out four circles of puff pastry the same size as the diameter of your apples and cook them in a preheated oven at 200°C.

Step 8

Take them out of the oven when they have risen and turned golden brown. Keep at room temperature.

Step 9

Cook the apples in the oven: arrange them in a gratin dish and put a cinnamon stick in each apple.

Step 10

Sprinkle with sugar and add a generous knob of butter to each apple.

Step 11

To serve, spread a generous layer of the crème pâtissière on to the pastry.

Step 12

Arrange a cooked apple on top and serve warm.
