Soft-boiled egg in a nest of shoestring fries

Ingredients

  • 4 eggs
  • 4 large Bintje potatoes
  • 50g Président butter
  • Salt, pepper

Preparation

Step 1

Heat up your fryer to 160°.

Step 2

Peel and wash the potatoes.

Step 3

Shred the potatoes with a mandolin slicer.

Step 4

Wash the shredded potatoes again to remove all the starch, which will prevent them from sticking to each other.

Step 5

Drain and dry them thoroughly then cook them in the fryer for 1 minute (the potatoes should be cooked but not golden brown).

Step 6

Drain and transfer to a sheet of kitchen roll.

Step 7

Heat the water in a pan.

Step 8

When the water comes to the boil, gently lower the eggs into the pan.

Step 9

Cook for 5 minutes, remove them from the pan and immerse them into iced water to stop them cooking.

Step 10

Gently remove the shells and set aside.

Step 11

Gently return the eggs to the boiling water for 30 seconds to heat them up.

Step 12

Return the potatoes to the fryer to brown them.

Step 13

Drain and season with salt.

Step 14

In a soup plate, form a nest with the drawstring fries and lay a soft-boiled egg in the middle.

Step 15

Serve immediately with a few knobs of butter.
